It's Apple Time!

Well, it's probably the end of apple time, or close to it, but fall still makes me think "apples", so I wanted to share a super-good apple recipe that I usually make in the fall/winter. It's great as left-overs, too - just warm your serving up in the microwave :) Oh, now I wish I had apples and cream on hand!! I'd make some!

Apple Roly-Poly's

Pastry:
1 3/4 cups flour
1/4 cup sugar
4 tsp. baking powder
1/2 tsp. salt
1/4 cup shortening
1/4 cup butter or margarine
2/3 cup sour cream

Combine dry ingredients. Cut in shortening and butter until crumbly. Blend in sour cream until ball forms (it's a kinda sticky dough). Roll out on a well-floured surface to make a 15"x10" rectangle.

Filling:
1/4 cup butter, softened
1 cup packed brown sugar
2 tsp. cinnamon
6 med. apples (5 cups) peeled and coarsely shredded

Spread dough with butter. Sprinkle with remaining ingredients. Roll up jelly-roll style (starting with the long side). Cut into 12 pieces. Place into a 13"x9" pan.

Topping:
2 1/2 cups water
2 Tbsp. brown sugar
1 tsp. cinnamon
1/2 cup light cream (I always use heavy since that's what I usually have)

Combine water, brown sugar and cinnamon in saucepan; bring to a boil. Remove from heat; stir in cream. Carefully pour hot mixture over unbaked dumplings.

Bake, uncovered, at 350°F for 35 minutes or until bubbly. Center will jiggle when hot, but will set as it cools. Serve warm. Yields 12 servings.

lol, before I had a grater (shredder - the thing you grate cheese with or whatever you call it), I just sliced them thin, then chopped the sliced. Now I use my cheese grater :) Warning, it is a messy recipe, but SO worth it!! :D

Ohh, Miriam, I remember how good those are! O.k., quick, think of something else, something low-carb!!

Phoebe, I have used regular milk in place of cream in recipes like this (not this exact one, I will admit), and it usually turns out very good. It is a little richer and creamier if you use cream, but if I am in a pinch and decide I am not running to the store, I just use milk.

Aww, Sally, I'm afraid I didn't think low-carb fast enough (if you've read my latest posts) :( I'll have to try and do that one next time.
