Apricot-Garlic Chicken

The other day I needed to come up with something for supper. I wanted something that was good, new, and most of all, easy. I brainstormed for a bit, stirred up a concoction and it was really good!! I wish I hadn't run out of time and had been able to take a picture. Not only did it taste good, but it looked pretty, too :) I didn't measure the ingredients, so these are my close guesses:

Apricot-Garlic Chicken
2-4 boneless, skinless chicken breasts
1/3 cup Apricot Jam
2 med. garlic cloves, minced or crushed
1 Tbsp. mustard
1 1/2 tsp. honey
2 Tbsp. butter

Combine jam, garlic, mustard, honey and butter in small saucepan over med. heat until sauce-like. Place chicken in baking dish, spread with sauce. Cover and bake at 250° for 2 hours or until done (my chicken was frozen, so for thawed chicken you would lessen the baking time I'm sure). Serve chicken with pan juices.

  1. Yum! I made some "dump" recipes using similar ingredients. They are so easy to throw into the slow-cooker.

  2. Sounds yummee! Too bad I don't keep apricot jam in my cupboards. The hubs only goes for the basic grape and I don't eat enough of that stuff to warrant keeping a variety of flavors for myself.

  3. That sounds great! I love apricot jam...it is great with so many things besides toast! I always keep it on hand for some little butter jam cookies that are my favorite.
